Always a hit with everyone, this chocolate cake is rich and moist. You can't just eat one bite!

Ingredients
  

  • 2 cups white granulated sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup Dutch processed cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ¾ tsp salt
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • ½ cup oil vegetable, canola, or your choice
  • 2 ½ tsp pure vanilla extract
  • 1 cup strong hot coffee or mix 1 cup hot water + 1 Tbsp instant espresso powder

Instructions
 

  • Preheat oven to 350°F. Grease and flour two 8 inch or 9 inch cake pans.
  • In a large bowl, combine sugar, flour, cocoa powder, baking powder, baking soda and salt.
  • With mixer on low speed, beat in eggs, buttermilk, oil and vanilla, until just combined.
  • Stir in coffee (mixture will be thin).
  • Divide batter evenly into prepared pans.
  • Bake in preheated oven 15 minutes, then rotate pans.
  • Bake 15 more minutes or until toothpick inserted in centre comes out clean.
  • Cool cakes in pans on wire rack 10 minutes.
  • Remove cakes from pans and cool on rack completely.
  • Frost cooled cakes with your choice of frosting/buttercream. (I like to use chocolate ganache)
