Preheat oven to 350°F. Grease and flour two 8 inch or 9 inch cake pans.
In a large bowl, combine sugar, flour, cocoa powder, baking powder, baking soda and salt.
With mixer on low speed, beat in eggs, buttermilk, oil and vanilla, until just combined.
Stir in coffee (mixture will be thin).
Divide batter evenly into prepared pans.
Bake in preheated oven 15 minutes, then rotate pans.
Bake 15 more minutes or until toothpick inserted in centre comes out clean.
Cool cakes in pans on wire rack 10 minutes.
Remove cakes from pans and cool on rack completely.
Frost cooled cakes with your choice of frosting/buttercream. (I like to use chocolate ganache)
